Hey everyone, hope the weeks going well!

A reminder if you interested in joining me on a n epic foodie trip to Vietnam in 2024, there are still a few early bird spots lefts with savings on the full price of the trip!

This will be a small group foodie trip, maximum size 20 people, where we’ll explore beautiful Hanoi & Hoi An - think street food, cooking classes, market & meeting fishermen, farmers, cooks, and families and learn not just how food is prepared, produced, farmed, and eaten, but how food tells a story of Vietnam's history and culture. Plus we will have a guide the WHOLE time!

With a globally online community, I’m looking forward to the opportunity be able to connect in person with people who want to come on the trip from around the world as we eat our way through Hanoi & Hoi An. Come on your own, with friends or family. Everyone is welcome! Just need to 18 years or over at the time of the trip.

I don’t know about you, but warm roast veggie salads are very necessary in our house! they really take your salad game from a side act to the main event & into a meal. They also work well for a make ahead dishes, holding up to being dressed and held without wilting. This salads roll call includes the likes of nuts, herbs, a spanky dressing, haloumi, butterbeans & we have a salad that you want to be eating at least once a week!

Brassicas are the family of vegetables that generally thrives in the cooler months but also have their own spikes through out the year. Think broccoli, cauliflower, cabbage, kales, Brussel sprouts. Highly nutritious and work a treat for a roast veggie dish like this, holding up well to roasting and becoming next level delicious once you get them caramelised and gnarly! The flavours become sweet, meaty & rich.

The salad gets a lift with a fragrant dressing based on Ras el hanout - an intoxicating Morrocan spice mix of various spices including cumin, ginger, turmeric, cinnamon, black pepper, white pepper, coriander, cayenne, allspice, nutmeg, and cloves. This is paired with both vinegar, citrus, honey to create a knockout dressing.

Haloumi provides and delicious savoury addition with butterbeans adding their creamy goodness. I love throwing a pulse in roast veggie salads. It bulks it out and adds that extra nutrition as well.

Brassicas - The mix of broccoli, cauliflower, cabbage is a knockout and one thats often in the fridge but if you have other veggie like pumpkin, Brussels, onions, sweet potato, carrot, fennel - feel free to use them in place of some or all. Beetroot is also another great one to use.

Ras El Hanout - I love the mix of all these spices but feel free to leave out or replace with a curry powder or even a mix of some of the spices like Cumin & Coriander.

Honey - sub in maple if you like or if you’re sweet enough, sub in maple syrup.

Haloumi - Another great option for a cheese would be a feta or goats cheese crumbled over the salad when serving. Yogurt is also a fantastic option. If you want to keep it dairy free, a garlicky tahini sauce is great made with equal parts tahini/water, a couple cloves crushed garlic, juice of 1 lemon and seasoning to taste.

Butterbeans - one of my favourite pulses for adding to salads, soups, braises or blended to a puree like hummus. Swap out for chickpeas, lentils, kidney beans … you get the idea, anything!
